The magical atmosphere of Christmas and New Year is most felt in Europe. And this is not surprising, because residents of  European countries approach the process of preparing for a vacation with all responsibility. Beginning on the first day of December, the streets of ancient cities are adorned with numerous garlands and hundreds of gorgeous New Year’s decorations.

A family tradition that many Americans have at Christmas is building gingerbread houses together, a symbol of family and home. Although not a religious tradition, it reminds us that family reunification is a gift from God and something to be thankful for.

A little history: The oldest known gingerbread recipe dates back to 2400 BC From Greece. The consumption of gingerbread eventually made its way to Europe via the Silk Road after initially gaining popularity in Asia and the Middle East.

Tradition, or the Brothers Grimm story of Hansel and Gretel, who found a house in the forest with similar observations to those found in the gingerbread house, makes it unclear who came first. The gingerbread house was constructed in Germany in the 16th century.

But it grew in popularity and eventually made its way to the New World, where we Americans adopted it as a regular Christmas tradition.

Types of Gingerbread

Gingerbread Brown
It’s made with honey or syrup gingerbread dough and baked without a waffle base. Use at least one part of sugar or sweetener for every two parts of flour. Ground seeds are not required.

Gingerbread Waffles
This gingerbread is made on a waffle base and contains at least 12.5% almonds and/or walnuts. If necessary, use a 14% powdered seed mix instead.

Gingerbread with honey
It is one of the oldest gingerbread variations. Additional flavours can be added to a pasta dough produced from honey, eggs, flour, and the finest spices.
